Baked Stuffed Lobsters
(or as we say in New England, Lawb-stahs)!
(2) 2-lb lobsters
½ lb medium raw shrimp
½ lb large scallops
1 chopped shallot
2 cloves garlic crushed
1 stick butter
½ cup white wine
2 pkgs Ritz crackers (crushed)
3 tbsp lemon juice
Peel and clean shrimp. Cut in halves or thirds.
Cut scallops in small bitesize pieces
Melt butter and add garlic and shallot
Add white wine and lemon juice
Saute shrimp and scallops until shrimp turns pink
Add mixture to crushed Ritz
Slice lobster down through body and tail
Open and clean out (leave in tamale if desire)
Put foil on claws to protect
Place on foil lined cookie sheet
Stuff lobsters with Ritz mixture and Bake 350 for 45 minutes
